To make the dumplings: Gather a golf-ball-sized portion of the dumpling batter onto a soup spoon, then push the dumpling onto the stew using a second spoon. Reduce the heat to low, cover, and cook until the dumplings have doubled in size, 15 to 18 minutes. Following the steps below, drop golf-ball-sized dumplings over the top of the stew, about 1/4 inch apart (you should have about 18 dumplings). Return the stew to a simmer, stir in the peas and tarragon, and season with salt and pepper. Stir the warmed milk mixture into the flour mixture with a wooden spoon until incorporated and smooth.ĥ. Microwave the milk and fat in a microwave-safe bowl on high until just warm (do not over-heat), about 1 minute. For the dumplings: Stir the flour, baking powder, and salt together. Shred the chicken, discarding the bones, then return it to the stew.Ĥ. Allow the sauce to settle for a few minutes, then skim the fat from the surface using a wide spoon. Cover and simmer until the chicken is fully cooked and tender, about 1 hour.ģ. Nestle the chicken, with any accumulated juices, into the pot. Stir in the broth, milk, thyme, and bay leaves. Whisk in the sherry, scraping up any browned bits. Add the leeks, onion, and 1/4 teaspoon salt and cook until softened, about 7 minutes. Add the butter to the Dutch oven and melt over medium-high heat. Return the pot to medium-high heat and repeat with the remaining 2 teaspoons oil and the remaining chicken. Transfer the chicken to a plate and remove the browned skin. Add half of the chicken and cook until golden on both sides, about 10 minutes. Heat 2 teaspoons of the oil in a large Dutch oven over medium-high heat until just smoking. For the stew: Pat the chicken dry with paper towels, then season with salt and pepper. Now, I’m not of the belief that chicken soup can cure a world of problems–I don’t think it’s going to fix everything just yet–but I am the kind of person who likes to live in hope, and who thinks it’s easier to deal from a place with a belly full of warmth.Ĭhicken and Dumplings with Leeks and TarragonĪdapted from Cook’s Illustrated, February 2005ĬI notes that you should not use low-fat or fat-free milk in this recipe, and that you should start the dumpling dough only when you’re ready to top the stew with the dumplings.Ĥ tablespoons unsalted butter (1/2 stick)Ģ medium leeks, white and llight green parts only, cut in half lengthwise and then into 1-inch piecesĦ tablespoons unbleached all-purpose flourģ tablespoons minced fresh tarragon leavesģ tablespoons reserved chicken fat (or unsalted butter)ġ. I had never had chicken and dumplings before, but wow, are they tasty and just perfect for the freezing winter when you need something substantial. I’m very awkward when I find myself under the spotlight, so when I said thank you, I tried to change the subject and find out if she had a favorite recipe and guess what–she did!Īnd now I owe Joy an extra thank you. The recipe comes from Cooks Illustrated, but by way of a writer for Philadelphia Style Magazine, Joy Manning, who had been kind enough to think of me for an article she wrote this fall (PDF a few bullets down over here) about food blogging. In fact, sometimes, messy and deliciously imperfect is just what I needed, whether I realized it initially or not. But I’m not above falling in love with a dish that doesn’t give a damn about my desire to control its every aspect. You accidentally measured wrong and now the aforementioned brownie bars aren’t all even. You over-browned an edge of the cake but it has absolutely no bearing on the final flavor. Nope, I’m thinking that being a perfectionist isn’t about so much what you do, but how you react when little, obviously unsubstantial things go wrong. Oh, and I have been known to cut cookie bars with a ruler, but I never thought it was about being crazed with perfection–I just don’t understand why anyone wouldn’t use a tool readily available to them. I never considered myself one before fussy, maybe needly and exacting at times. I’ve been thinking this week–probably more than anyone should–about what it means to be a perfectionist.

One way to do this is to optimize the dynamic pricing system with pricing and category managers in mind, allowing them to override pricing recommendations. Your company will have to overcome this trust barrier. This refers to when members of a company’s pricing staff don’t understand the logic behind the mathematical algorithm of dynamic pricing, so the staff rejects the price given by the system because they don’t trust it. Another issue in dynamic pricing is the “black box problem”. Monitoring dynamic pricing policies can be difficult as well. Having a “one size fits all” dynamic pricing system, in which everyone is offered the same price for the same product, is nearly impossible. In addition, the retail market is a very versatile and flexible industry. In 2017, the statistic went down to 22 percent. In a 2016 report, 28 percent of respondents saw dynamic pricing as an opportunity. Even Walmart is capitalizing on dynamic pricing by advertising certain products on their digital signs based on the temperature outside.Ĭons: Some studies seem to indicate that dynamic pricing may be on the out. Every year on Black Friday, Amazon changes the prices of its most competitive products multiple times throughout the day to mimic the price changes of store-based retailers. With Uber’s surge pricing, dynamic pricing comes into play as they increased prices based on demand and time of day/week. United, Delta, American and Southwest airlines all use this pricing method to determine variables such as the cost of travel based on peak seasons and seat prices based on availability. Airlines were one of the earliest adopters of dynamic pricing. All of your customers will be paying the same price for the same product and you can competitively raise or lower your prices based on the market. Amazon’s success with dynamic pricing makes it apparent that this pricing technique is critical in e-commerce, omnichannel, and brick-and-mortar competition to drive both margin growth and earnings. Pros: You get to choose what factors will drive your prices. Here’s a guide of the pros, cons, risks, and rewards your company can attain from utilizing either of these tactics. But why does it matter?ĭynamic pricing and personalized pricing both achieve different outcomes for your business. To break it down, p ersonalized pricing is customer-centric and dynamic pricing is not. It’ s a special offer by the retailer to a specific customer based on their shopping tendencies. A personalized price is for one p articular p erson to see at a given time. However, a d ynamic pric e is a universal price that everyone can see. The reason that dynamic and personalized pricing are often confused is that both pricing techn iques are sophisticated, access large amounts of real-time data, and both use the same math. These deals are extended to shoppers in specific circumstances and are preferably done one-on-one. This pricing method offers unique deals to consumers who keep coming back. The idea behind personalized pricing is that highly loyal customers will receive better price offers than unknown customers who have no history with the brand. Retailers who follow this technique offer customized prices based on their own assessment of the customers’ behavior and their influence over shoppers’ in-store behavior. Before the price tag was invented in 1861, prices had to be negotiated with the buyer. Historically, it’s not unusual to see a change in prices over time and across customers. The purpose of personalized pricing is that the retailer has an idea of who the customer is and incentivizes the customer based on their characteristics and actions. Dynamic pricing doesn’t care who your customer is and if they are of value to the retailer. In dynamic pricing, everyone sees the same price, no matter who the customer is. Variables like these include the time of day, the temperature outside, the available supply and the competitor’s prices. And then there’s your price.ĭynamic Pricing is when prices change based on variables that are not related to the customer. In 2004 it also launched Polka, a low cost ISP. Not surprisingly for a company that touts itself as having a safety culture, the company invested in technology to make driving safer. When SWA is employed, operations cease until the risk is addressed and both the employee and management agree that it is safe to resume work.” “Our SWA policy empowers our employees to stop work whenever they identify unsafe work conditions. One particularly praiseworthy practice is that the company empowers operational personnel with stop work authority (“SWA”). Select though, makes safety a priority, The Select annual report explains the various safety programs the company employs. Fontaine also points out that while there are many fine logistics firms in the industry, there are small fly by night operations that do not seem to care as much about safety. More accidents occur at night when visibility is low, and because the human body was just not designed to operate efficiently at night.īecause Horizontal drilling often occurs in remote locations that are not conducive to family life, many of the drivers are young, single men this demographic does not have the same safety profile as older drivers. Water deliveries to the wells are made 24 hours a day, seven days a week. At some point, these trucks have turn off the main road and onto gravel and dirt roads that lead to the pads, adding rough terrain to the trip. These 2 lane roads are difficult to maintain because of the weight of the trucks and the additional traffic, though the industry does help to support local governments in this area. The water trucks start on open 2 lane roads, but the boom in activity around horizontal drilling basins often leads to extreme congestion and traffic to get from origin to destination and back. Transporting these volumes of water is more dangerous than just driving a semi-truck on an Interstate. Increasingly, the transportation of water has shifted away from tank truck operations to pipelines for disposal or reuse.” But Michael Fontaine – the vice president of procurement, fleet, and facilities at Select – explained that toting water by truck is still big business for Select. This flowback and produced water must be captured, contained, and then either treated with chemicals and recycled for reuse in subsequent fracturing jobs or disposed of in an environmentally sound manner.” The flowback volumes can also lead to the need for tanker truck moves. The annual report goes on to explain, “up to fifty percent of the water pumped into the well during the hydraulic fracturing process returns as “flowback” during the first several weeks following the well completion process, and a large percentage of the remainder, plus pre-existing water in the formation, is recovered as produced water over the life of the well. This “can require in excess of 5 million barrels to complete all of the wells on the pad.” To supply 5 million barrels of water to a pad requires more than 38,000 tank truck load shipments if temporary above ground pipelines are not feasible. Oil and gas companies increasingly place multiple wells on a pad. According to Select’s annual report, in excess of 500,000 barrels of water for the lifecycle of a single well may be necessary. The amount of water used during the lifecycle of a well has grown significantly over the years. The hydraulic fracturing process involves the injection of large volumes of water and a proppant-typically sand-combined with chemicals, under high pressure, thousands of feet below ground to fracture the surrounding rock and allow oil or gas to flow upwards into the well. Hydraulic fracturing is frequently used in conjunction with horizontal drilling. Water is essential to the process of hydraulic fracturing. This involves more dangerous driving conditions than other trucking jobs, which led the company to invest in a fleet safety solution. These trucks make deliveries to, and pick-ups at, oil and gas wells engaged in hydraulic fracturing in every US oil and gas basin.
